Research on hop flavor biotransformation reveals that yeast strains such as Saccharomyces cerevisiae convert linalool into terpineol, with conversion efficiencies ranging from 5.7% to 6.4% under controlled fermentation conditions. This biological route offers an alternative to traditional extraction from pine oil or chemical synthesis from alpha-pinene. While fermentation-derived terpineol currently represents a niche supply, its potential for 'natural' labeling appeals to premium beverage and cosmetic segments. However, yields remain modest, and purification costs are higher than petrochemical-based routes. Consequently, most commercial terpineol still comes from turpentine fractionation, where feedstock costs and refinery output dictate pricing. The growing craft beer industry's interest in hop-derived terpineol for floral, lilac-like notes could gradually support premium pricing for bio-based material, but scale-up challenges and consistent quality control remain barriers.
