What is driving the shift from synthetic to natural colorants like annatto (bixin) in food applications?
Consumer perception is the core driver. Visual cues dominate food choice, and natural orange-yellow tones are associated with freshness and health, especially in juices and dairy. Annatto (bixin/norbixin) offers a key technical advantage: norbixin retains about 97% of its color after 4 hours at 120°C, outperforming many natural yellows like turmeric, which fade under heat and light. This stability makes it suitable for baked goods, processed meats, and beverages that undergo thermal treatment. Regulatory frameworks like GB2760 in China already permit its use across numerous categories, and global producers such as DDW, Hansen, and ADM are expanding capacity. The market is transitioning from a niche ethnic ingredient to a mainstream stabilizer for clean-label product reformulation.
