Tartaric acid is one of the three primary organic acids in grapes, accounting for roughly half to two-thirds of the acid content in ripe grapes. It is naturally unstable in wine: over time, it binds with potassium and calcium to form crystalline precipitates. These crystals are completely harmless and flavorless, often appearing on the underside of corks or at the bottom of bottles, especially in aged wines. Red wines show purple-tinted crystals due to co-precipitation with anthocyanins and tannins, while white wines show clear, glass-like crystals. Many winemakers deliberately avoid cold stabilization or filtration to preserve flavor complexity, which is why unfiltered and natural wines often show visible sediment. The presence of tartrate crystals is generally a sign of minimal intervention rather than spoilage. For industrial buyers, this behavior underscores tartaric acid's role as a stabilizer and acidity regulator, not just in wine but across food and beverage applications.
