Citric acid (citric acid anhydrous, CAS 77-92-9) is a white crystalline weak organic acid with a density of 1.67 g/cm³, melting point of 153–159 °C, and high water solubility. It is a versatile acidulant and chelating agent widely used across food, pharmaceutical, cleaning, and industrial applications.

Food & beverage: the leading organic acid, providing a mild, refreshing sour taste in drinks, canned goods, and confectionery.
Pharmaceutical: citrate ions chelate calcium, aiding anticoagulation and stone prevention; used in formulations like effervescent tablets.
Household cleaning: effective descaling agent for kettles, showerheads, glass, and bathroom fixtures, often as a food-grade powder or solution.
Industrial: applied in water treatment as a carbon source substitute, textile finishing for wrinkle-resistant fabrics, and cosmetics for pH adjustment and exfoliation.

China is the world's largest producer and exporter, with output concentrated in Shandong, Jiangsu, and Anhui. Production relies on Aspergillus niger fermentation of corn or molasses; the monohydrate form is the dominant commercial grade.
